2 c Unsweetened almond milk
1/2 tsp vanilla
1/4 c + 2 tbls sugar
2 tsp gelatin (1 packet)
1 c sliced strawberries
2 tsp lemon juice
Pinch of salt

Directions:
Directions:
Combine 1 1/2 c almond milk, 2 tbs sugar, and the vanilla in a small saucepan over medium heat. Cook, stirring, until the sugar dissolves; remove from the heat. Pour the remaining 1/2 cup almond milk into a large bowl, sprinkle on the gelatin. Let stand about 1 minute, until the mixture begins to foam.
Pour the almond milk-sugar mixture into the bowl, and whisk until the gelatin in fully incorporated. Pour the mixture into 6 small ramekins or cupcake molds. Cover with plastic wrap and refrigerate at least 4 hours or overnight.
For the compote, combine the strawberries and 1/4 cup of the sugar in a small saucepan over low heat. Cook, stirring until the sugar dissolves. Add the lemon juice and salt and continue cooking until the strawberries begin to break down, about 7 minutes total. Taste and add more lemon juice if necessary.
Serve the panna cotta in the ramekins, or carefully unmold onto individual dessert plates, topping each dessert with a spoonful of the strawberry compote.
