Ingredients: Crepes 4 eggs 2 c water 1/4 c milk 2 tbls butter 1 3/4 c all purpose flour Filling 2 c cottage cheese 8 oz farmer cheese 6 oz cream cheese 6 tbs sugar 1 egg 1 1/2 tsp vanilla 1/2 c raisins (optional) 2 tbs butter Fresh strawberries (garnish)

Directions:For crepes--Place eggs, water and milk in blender, processor or bowl. Melt butter in 6 inch skillet; remove from heat. Blend egg mixture. Add melted butter and flour and mix until smooth. Refrigerate 1 to 2 hours. Lightly wipe skillet with paper towel and set aside. Heat skillet until drop of water bounces off surface. Add scant 1/4 c crepe batter and tilt pan quickly to cover entire surface; pour out any excess batter. Cook over medium high heat until edges of crepe begin to curl and brown; do not turn. Place crepe brown side up on towel and cover lightly. Repeat with remaining batter. Keep covered until ready to fill and form into blintzes. For filling--Combine cheeses, sugar, egg and vanilla in bowl or processor and blend well. Stir in raisins if desired. Spoon 1 heaping tbls filling down center of crepe. Tuck two sides toward center, then fold remaining two sides to enclose like an envelope. Place seam side down on platter. Repeat with remaining crepes and filling. Heat 2 tbls butter until hot and bubbly in large skillet. Add blintzes seam side down and fry until golden brown on both sides. Transfer to heated plates. Garnish with strawberries. |
