2 tbs unsalted butter, plus more for greasing ramekins
1/4 c flour, plus more for dusting ramekins
1 1/2 c whole milk
5 oz gorgonzola dolce
1/4 tsp kosher salt, plus more to taste

Butter 6 four ounce ramekins and coat the insides with flour. Set aside. Preheat oven to 350.
In a small saucepan over medium heat, melt butter until it turns frothy. Add flour all at once, and whisk constantly for two minutes, until fully incorporated and smooth. Add milk in a steady stream, still whisking, until mixture thickens and turns smooth, about 3 -4 minutes.
Remove from heat and whisk in the cheese until fully incorporated. Season generously with salt and pepper. Let cool slightly, and add egg yolks, whisking until well incorporated. Cool for 10 minutes.
In the bowl of an electric mixer, whip egg whites until they reach stiff peaks, adding in 1/4 tsp salt near the end. Fold 1/3 of the whites into the cheese mixture until incorporated, then fold the remaining egg whites.
Divide among the ramekins, and place in a large enough pan to hold them all. Pour hot water in the pan, till halfway up the sides of the ramekins.
Bake for 25-30 minutes until puffed and golden. Serve immediately as soufflés will fall soon after removing them from the oven.
