5-7 lb. pork butt
2-3 cloves garlic, quartered
salt and pepper to taste
Liberal sprinkling of ground sage
1 large onion, sliced thick
8 oz. coca-cola or beer
1 C. or so to taste of BBQ sauce of your choice (I use Wegman’s Memphis Style©. You may want to add about ¼ cup Boss Sauce© or a few dashes of any hot sauce to “kick it up a notch”)

Spray inside of crockpot with cooking spray. Trim as much fat as possible off of pork (don’t worry about keeping it together in one piece as you will be shredding it anyway). With a sharp knife, punch holes in pork and insert the quartered cloves of garlic. Rub liberally with spices. Place sliced onions in the bottom of the crockpot. Add coke/beer over onions. Put pork into the crockpot. Cook on low overnight or at least 10 hours, depending on the size of the pork butt. When pork is very tender, remove from juices in crockpot, discarding juice and onions. Pull pork apart with two forks to desired texture. Trim any additional fat. Return pork to crockpot and stir in BBQ sauce. Cook on low for another hour.

A fun way to serve this is to put a scoop of baked beans into the bottom of a large plastic wine glass. Top with pork to fill glass about ¾. Top with a spoon full of coleslaw and a cherry tomato.
