"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Directions:
In a saucepan, combine 1/2 cup sugar, cornstarch and salt; gradually stir in milk. Cook and stir over medium heat until mixture boils and thickens. Cook 2 minutes longer. Remove from heat. Stir a small amount of hot mixture into yolks; return to hot mixture. Cook 2 minutes, stirring constantly. Remove from heat. Add butter and 1 teaspoon vanilla; cool to room temperature. (To prevent a crust from forming, put clear plastic wrap or waxed paper directly on top, touching surface of the hot pudding clear to sides of bowl. Slice bananas in bottom of baked pastry shell, then pour pudding over bananas. Beat egg whites with cream of tartar and 1/2 teaspoon vanilla until soft peaks form. Gradually add 4 tablespoons sugar, beating until stiff peaks form and all sugar is dissolved. Spread atop pie, sealing to pastry. Bake in moderate oven (350º) for about 12 to 15 minutes, or until meringue is golden. Cool.
