2 C flour
2 C sugar
2 tsp baking powder
1 tsp salt
2 tsp cinnamon
4 Eggs
1 C vegetable oil
4 C raw carrots, grated
1/2 C pecans, chopped

DREAM-CHEESE FROSTING
6 Tbsp butter, softened
10 Oz cream cheese, softened
2 C powdered sugar
1 tsp vanilla
1 tsp maple flavoring (optional)

Directions:
Directions:
Sift together flour, sugar, baking powder, salt and cinnamon. In a large bowl, beat eggs until thick; continue beating while slowly adding oil. Slowly add the flour mixture, spoon by spoon. Fold in carrots and nuts; pour into 2 greased and floured 8-inch pans. Bake for 30 minutes at 350º. Cool; spread Dream-Cheese frosting between and on layers.
