4 boneless, skinless chicken breast halves
¼ cup Italian seasoned dry bread crumbs
2 T. olive oil
1 T. butter
1 T. flour
1 cup chicken stock
1/3 cup white wine
1/3 cup lemon juice
1 ½ c. frozen peas
1 ½ c. sliced fresh mushrooms
1 c. grated provel cheese
2 thin slices prosciutto, halved (can substitute ham)

Directions:
Pound chicken breast halves gently and roll in bread crumbs.
Heat oil in a large pan over medium-high heat.
Add chicken, sauté until cooked through, 6-9 minutes per side. Remove from pan; keep warm.
Make a roux by melting butter in a small pan. Add flour, cover over medium heat, stirring until combined and slightly browned 3-5 minutes. Remove from heat.
In a saucepan, combine chicken stock, wine and lemon juice; bring to a boil. Add roux to saucepan, stirring until mixture has thickened slightly.
Add peas and mushrooms; reduce to a simmer. When peas and mushrooms are heated through, stir in provel until melted.
Return chicken to the large pan; place over medium heat.
Top each piece with a ½ slice of prosciutto.
Cook until chicken and prosciutto are heated through.
Serves 4.
Transfer to plates, with sauce and serve.
