1 box (3 cups) graham Cracker crumbs
2 (8 oz) cream cheese
3/4 cup powdered sugar
1 cup sugar
1 stick melted butter
2 tsp vanilla

1 (3 oz) box lemon Jell-O

1 cup hot water

1 (12 oz) can evaporated milk

2 Tbsp lemon juice

Directions:
Directions:
-Place evaporated milk in freezer for 20 minutes; needs to be ice cold.
-Mix Jell-O with hot water, stir until dissolved, then put in freezer; you want it to thicken, NOT set. Stir once at about 20 minutes, then put in refrigerator until ready to use.
-Mix graham cracker crumbs, powdered sugar and melted butter until well blended. Press 3/4 of the mixture onto the bottom of a 9 x 13 pan to make the crust. Save the rest of the mixture for the top of the cake.
- Mix cream cheese, sugar and vanilla until fluffy and well blended. Set aside
- AFTER the Jell-O has thickened - Open the canned milk pour into a large bowl and beat until fluffy and looks like whipped cream. Add the cream cheese mixture until well blended. Slowly mix in the Jell-O. Pour into the pan and top with remaining crumbs. Refrigerate about 2 hours. Store covered in the refrigerator.
