1 6-inch tortilla (either flour or corn)
1/2 cup shredded Monterey Jack cheese (2 ounces)
3 ounces bulk pork sausage
1 Tbs. finely chopped green pepper
1 egg
1/4 cup milk, light cream, or half-and-half
1/8 tsp. salt
Salsa (optional)
Fresh cilantro, chopped (optional)

This list of ingredients is for 1 serving. Feel free to double or triple or quadruple, etc. for whatever number of servings you need.

Starting with a cold skillet, heat tortilla about 45 seconds or until warm, turning once. Place tortilla into a greased 15-ounce casserole or ramekin or small individual baking dish. Top with 1/4 cup of the cheese. In the same skillet cook sausage and green pepper until sausage is cooked and green pepper is crisp-tender. Drain well, (You may want to substitute chopped green chiles for the green pepper.) Drain well. Spoon over tortilla and cheese in baking dish. In a small bowl, combine egg, milk or cream, and salt. Mix well. Pour egg mixture over ingredients already in baking dish. Top with remaining cheese. Bake in a 350º oven for 30-35 minutes or until firm. Serve with salsa and cilantro.

Because it is made with egg and sausage,this may be considered primarily as a breakfast casserole, but is would be delicious anytime...lunch or dinner included. Get ready to receive compliments!
