Add Dry Rub!!

Another key to doing ribs, they have a membrane on the back, very thin layer of skin. Remove before putting on the dry rub.

- Put the dry rub on about 3 hours before cooking. Remove membrane before adding dry rub!!!

- Have to cook them on the grill to get the flavor. I usually add some cherry or apple wood in with the charcoal.

Cook the ribs for about ½ hour on the grill, indirect heat, just to get them browned and the smoke flavor.

(I usually mix water beer or wine, depending on what’s available in the drip pan.)

- Before putting them in the oven baste with olive oil

- Take them off the grill, put them in a roaster and cook 2 to 2.5 hours (depending on how thick they are) at 275.

Baste with olive oil before putting into the oven.

- ½ hour before taking out of the oven, hit them with a coat of BBQ (Jack Daniels original #7 is my go to) sauce.

- Hit them again with sauce and put on the grill, direct heat, to caramelize the BBQ.

- Quick on the grill, 10-15 minutes tops, just long enough to brown the BBQ sauce.
