1 pkg pork ribs (this recipe makes a perfect amount for the pkg from Costco)

SPICE SEASONING RUB
(this can be made ahead, and larger quantity than kept in an air tight jar/container for use as spices and rubs)
3 tbsp chili powder
2 tbsp paprika
1 tbsp cayenne
1 tbsp ground cumin
1 tbsp ground coriander
1 tbsp granulated garlic
1 tbsp granulated onion
1 tbsp kosher salt
1 tbsp cracked black pepper


BASTING SAUCE
1/2 tsp salt
1/2 tsp dry mustard
1 bay leaf finely crumbled
1/2 tsp chili powder
1/4 tsp paprika
1/2 tsp tabasco
2 tbsp Worcestershire sauce
1/4 cup cider vinegar
1/2 can beef broth
1/4 cup (slightly less) oil
1 1/2 tsp soy sauce
1 garlic clove crushed

BBQ SAUCE
1 cup ketchup
3/4 cup water
1 cup brown sugar
2 tsp dried mustard
1/4 cup cider vinegar
1/2 tsp salt
2 tbsp worchestershire sauce
1 tbsp paprika
1/4 tsp chili powder
1/4 tsp dried chili pepper

Step One - A couple of days or night before. Place all Basting Sauce ingredients in a sauce pan and bring to a boil. Let cool slightly and place in a GLASS JAR.

Step two- Cut ribs into pieces about 3-4 ribs each. (Spice Rub mixture can be stored in an air tight container and use it for all sorts of cooking.) Rub spice mixture into rib pieces all over. Place pieces onto rack of roaster pan. I like to spray the pan and rack with pam first. Make sure pieces are not overlapping or hanging over edge of pan. Usually need two pans for Costco size ribs. Place water in bottom so that it about 1 inch but not touching the ribs. Seal the roaster pan very well (no steam can escape) with tin foil. Cook 2 hours and 10 minutes at 350F.

Step Three- remove foil and at this point usually I can now have just one pan as they have shrunk and it is ok if they touch now. Baste generously with basting sauce every 10 minutes, flipping the ribs each time. Do this 4 times in total. (so this has meant you have cooked the ribs another 40-45 minutes)

Step Four - Remove ribs from pan and chill for a couple of hours in fridge. If I have a little of the basting sauce left over I will sprinkle the remainder over them now.

Step Five - Prepare Bbq sauce. Place all bbq sauce ingredients in a saucepan and bring to a boil and than simmer for 1/2 hour. Set aside.

Step Six - When ready to serve. Baste BBQ sauce over ribs and either broil or BBQ them basting with BBQ sauce as you heating and broiling them.
