3/4 c. sugar
2 oz. fresh ginger peeled & diced (about 3-4" piece)
1 1/4 c. fresh lemon juice (about 6-7 lemons)
1/8 tsp kosher salt (or pinch of table salt)
5 c. water (divided)

Optional:
2 sprigs mint
vodka or tequila

Directions:
Directions:
Put sugar in a small pan with 1 c. of water. Bring to a simmer until sugar has dissolved into a simple syrup. Pour simple syrup into a blender and add ginger and 1 c. water. Blend until ginger has been pulverized. Strain ginger/sugar mixture into a pitcher. Add lemon juice, pinch of salt, and 3 c. cold water. Stir and taste. Adjust as needed. Refrigerate until cold.

Serve over ice.

For options:

MINT - Bruise several mint leaves and put in bottom of glass. add ice and pour in lemonade. Serve

COCKTAIL - Add 1 1/2 oz of either vodka or tequila

The fresh ginger gives this lemonade a spicy punch and it is very refreshing. We (Teresa, Ernie, Lucille, and Nancy) had a version of this lemonade when we visited The Ferral Pig in Kauai. This is my attempt at replicating it. They did not serve it with mint but Teresa put some in it and it turned out delicious.
