1 Lb skinless, boneless chicken breast halves, cubed
1 Tbsp olive oil
1/4 tsp salt
1/4 tsp ground black pepper
4 C chicken broth
8-12 Oz salsa
1 Can black beans, rinsed and drained
2/3 C Each: brown rice, white rice, quinoa
8 Oz shredded cheddar cheese
2-3 Green onions, sliced

Directions:
Directions:
Combine the rice and quinoa with chicken broth in rice cooker and cook. Meanwhile, in a large skillet over medium high heat, cook cubed chicken with olive oil, salt and pepper. Add salsa, black beans and the cooked rice mixture; gently stir together and heat through. Top with shredded cheese and once melted, sprinkle with green onions and serve.
