¼ c. butter
½ c. finely chopped onion
1 can condensed cream of chicken soup
2 c. shredded cheddar cheese
1 c. sour cream
1 tsp kosher salt
¼ tsp. black pepper
¼ tsp. Cajun seasoning (optional)
1 lb bag frozen shredded hash browns

Directions:
Directions:
Preheat oven to 350ºF.

Prepare a 9 x 9 in. glass baking dish with butter or non-stick spray.

Melt butter in large skillet over medium heat, and sauté the onion until soft, but not browned.

Turn heat to low and stir in the soup, cheese, sour cream, salt, pepper and Cajun seasoning, until well blended.

Remove skillet from heat and add the shredded potatoes; mix well.

Taste and adjust seasonings; turn out into prepared baking dish.

Bake for 40-45 min., or until hot and bubbly.
