1 tbsp. canola oil
1 cup chopped onion
2 cloves garlic, chopped
¼ cup fresh ginger, finely chopped
4 sweet potatoes, peeled & cubed
3 carrots, peeled and cubed
1 very small jalapeno, chopped
4 cups vegetable broth
½ cup light coconut milk
1 tbsp. fresh lime juice
¼ tsp. cayenne
½ tsp. curry powder

Directions:
In a large stock pot, heat oil then add onion, garlic, ginger and saute 2-3 minutes. Add sweet potatoes, carrots, jalapeno and broth. Bring to a boil over high heat. Reduce heat and simmer until vegetables are tender (35 - 45 min.) stirring occasionally. Let cool. Puree with hand blender until smooth. Add coconut milk, lime juice, cayenne and curry; stir well. Heat soup, and serve.
