1/2 c butter
1/2 c white sugar
2 eggs
1 c buttermilk
1/2 tsp baking soda
1 c cornmeal
1 c all-purpose flour
1/2 tsp salt

Directions:
Directions:
In a pot, melt butter and stir in sugar. Add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into a greased 8 inch square pan.

Bake in a preheated 375º oven for 30 minutes or until a toothpick inserted in the center comes out clean.

This is the best cornbread recipe that I have found. I sometimes make muffins from this recipe but will decrease the baking time. If you don’t have buttermilk, substitute milk and 2 tablespoons of lemon juice to equal one cup of the buttermilk.
