1 T butter
1 c sliced fresh mushrooms
2 1/2 c seasoned croutons
1 lb spicy pork sausage (cooked and drained)
4 eggs, beaten
2 1/4 c whole milk
1 can cream of mushroom soup
1 8 oz can chopped green chilies
2 c freshly shredded Monterey Jack cheese
3/4 c chopped green onions, for garnish
salsa verde, for garnish

Melt butter over med heat, sauté sliced mushrooms in the butter for 5 minutes. Remove from heat and set aside.
Spray 9 x 13 baking dish
Scatter the croutons in the dish and spread the cooked sausage over this.
Combine the eggs, milk, mushroom soup, chilies, and sauteed mushrooms in a bowl and mix well. Pour the egg mixture over the sausage and croutons. Cover tightly with plastic wrap and refrigerate overnight.
When ready to bake, heat oven to 325º. Remove the plastic wrap and bake the casserole for 50 min. Spread the grated cheese over the casserole and bake an additional 5 min. When serving, garnish with chopped green onions and serve with salsa verde, on the side.
