1 onion, chopped
1 16 oz can black beans
1 16 oz can kidney beans
1 8 oz can tomato sauce
10 oz package frozen corn
2 14.5 oz cans diced tomatoes w/chilies
1 packet taco seasoning
1 T cumin
1 T chili powder
3 or 4 boneless skinless chicken breasts
1/2 c chopped fresh cilantro

Directions:
Directions:
Place all items, up until the chicken breasts, in the slow cooker. Then, place chicken breasts on top. Cook on low for 10 hours or on high for 6 hours. Half an hour before serving, remove chicken and shred. Return chicken to slow cooker and stir. Top with fresh cilantro. Can also be garnished with low fat cheese and sour cream.

I use Rotel for the diced tomatoes but have also added additional low sodium diced tomatoes (whatever may be in the pantry). I have also added dried cilantro if I do not have fresh.
