4 bolillos split lengthwise, butter and toast cut side
warmed and seasoned refried beans
sharp cheese
pico de gallo

Directions:
Directions:
Split, butter, and toast bolillos. Spread with warm, seasoned refried beans and top with cheese. Heat in very hot oven, 425, or run under the broiler till cheese and beans bubble. Serve with pico de gallo.

I first had molletes at the Camino Real in Mexico City in the 70's...for breakfast...and never forgot how good they were...have made them at home off and on but recently discovered why mine weren't as good. I'd been leaving out the toasting with the butter before adding the beans, It makes a difference in the taste!!
