Ingredients:
3 egg whites
¼ teaspoon cream of tartar
6 tablespoons sugar

Directions:
Use this meringue recipe for all of the cream pies.
Beat egg whites with cream of tartar until soft peaks form. Gradually add sugar and continue to beat until stiff and glossy. Spread over the pudding in the pie shell. Make sure to seal it with the meringue. Use the back of a spoon to pull the meringue into nice peaks. The tips get browned and caramelized . Mom used to make cream pies with meringue quite often. I believe she had the recipes memorized and would just go grab milk and eggs, sugar and the rest from the cabinet and have an awesome pie whipped up in just an hour or so. Once the kids moved out, she went back to college and she and Dad opened an upholstery shop. She was a very busy lady and didn’t make the pies anymore; it’s been so long, that she can’t remember the specific ingredients. Since these are such an intense memory for me, I had to include some recipes for cream pies. These are from Betty Crocker’s Cookbook, which is the most likely source for her to use if not just from memory.).
