Ingredients: 2 ripe avocados 1 tsp. lemon juice 4 ounces cream cheese ½ tomato finely diced and excess water drained 1 to 2 tbsp. finely diced white onion season salt Tabasco sauce

Directions:Guacamole is one of those dishes that every family seems to have their own recipe for. They all follow the same basic directions: Cut the avocados in half. Remove and reserve pit. Scoop out avocado from the peel, put in a mixing bowl. Use a fork or pie dough cutter to roughly mash the avocado. Add the other veggies and spices. The flavor and quality of avocados varies greatly. You have to start with mild spices and the citrus of choice and then add to it to taste. You can always add more, but it’s tough to adjust if you added too much already. Place pit on top of guacamole and cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air reaching it. Refrigerate until ready to serve. |

Notes: When we first moved to Texas in the late 1960s, mom began making some Tex-Mex dishes. I remember the first time she served guacamole, we were pretty hesitant. At that time there was only one tortilla chip on the shelves, and that was plain Doritos.
