1 sugar pumpkin (not jack-o-lantern type)
1 tbsp. cinnamon
pinch ginger
2 tbsp. cornstarch
3 large eggs
2 tbsp. molasses
1 cup condensed milk
pinch salt
½ cup cream
2 tbsp. olive oil

Directions:
Directions:
Halve the pumpkin and seed it. Place cut side down on parchment paper covered cookie sheet. Roast in 375° oven for 1 hour. Scoop out flesh, and pulse in food processor. Add all other ingredients and pulse together. Pour into an unbaked one-crust pie shell. Bake at 350° for 1 hour.

Mom always made a fabulous pumpkin pie. I believe she used the recipe on the Libby’s Pumpkin pack. I like using fresh pumpkins and this is the best recipe I have found.
