½ cup shortening
½ cup sugar
2 eggs
2 cups flour
1½ tsp. soda
½ tsp. salt
1 can fruit cocktail, drained
1 tsp. vanilla
½ cup brown sugar
½ cup chopped nuts

FROSTING
½ cup white sugar
½ sticks of butter
½ cup Eagle brand milk
1 egg yolk






Directions:
Directions:
CAKE: Cream shortening and sugar. Add eggs one at a time. Sift together flour, soda, and salt.
Add fruit cocktail and vanilla. Pour batter into greased and floured 9 x 13 pan. Sprinkle brown sugar and chopped nuts on top. Bake at 350° until done.
FROSTING: Heat ingredients in saucepan and allow to boil for 2 minutes, stirring constantly. Remove from heat. Add ½ cup flaked coconut and ½ tsp. vanilla. Mix well and pour onto warm cake.

I do remember eating this cake and liking it, but I’ve never made it myself. Someone be adventurous and give it a try.
