CAKE
1 stick melted butter
1 cup quick oatmeal
1 cup white sugar
1 cup brown sugar
1¼ cup boiling water
2 eggs
1 ⅓ cups flour
½ tsp. salt
1 tsp. baking soda
1 tsp. cinnamon

FROSTING
1 stick butter
½ cup brown sugar
¼ cup canned evaporated milk
1 tsp. vanilla
1 cup shredded coconut
½ cup chopped walnuts or pecans

CAKE: Combine first five ingredients (butter through boiling water) and let stand for 20 minutes.
Mix in the rest of the ingredients. Pour batter into a lightly greased 9 x 13 cake pan. Bake at 350°. Mom’s recipe never said how long to bake it. It goes about 30 minutes until it bounces back when touched in center.
FROSTING:Melt butter in saucepan. Add sugar and milk. Bring just to a boil. Stir in last 3 ingredients. Let cool slightly and pour over slightly warm cake.

I have included several cakes recipes that my mom used to make frequently. I still remember how each one tastes. I still have the old recipe cards written in mom’s handwriting: You can tell which one she liked the most by the number of spills on them. One thing that makes these old recipes difficult is that none of them mention the size of the pan (or can or package) or how long the cake should be baked. I guess as these recipes were passed from one “housewife” to another, it was assumed that they would know.
This cake is one of my favorite things in the world to eat. I can remember coming home from school and smelling the warm oatmeal cake that Mom had just made. It was so hard to wait until after dinner to cut into it. This cake is super easy to make, and a wonderful comfort food. If I really need some comforting, I make a double batch of the frosting.
