CUPCAKES
White cake mix
Pineapple juice
1 cup crushed pineapple
4 tsp. coconut extract
Malibu Rum

FROSTING
8 ounces cream cheese
4 cups powdered sugar
8 ounces butter (softened)
1 tsp. (or so) coconut extract
¼ cup of Malibu rum

CUPCAKES:Follow the directions on the white cake mix box but use pineapple juice instead of water.Then add to the batter: crushed pineapple and coconut extract. Pour into paper lined cupcake pan. (Bake as directed.) When they come out of the oven, poke holes in the cupcakes and pour about a half tsp. Malibu Rum on top of each cupcake.

FROSTING: Mix together frosting ingredients. If frosting is too runny add a little more powdered sugar. Frost cupcakes and sprinkle coconut flakes on top.
