1¾ cups all-purpose flour
⅔ cup sugar
2 tsp. baking powder
½ tsp. baking soda
¼ tsp. salt
2-3 medium bananas mashed
⅓ cup shortening, margarine, or butter
2 tbsp. milk
2 eggs
¼ cup chopped nuts

Directions:
Directions:
In a large bowl combine 1 cup flour, the sugar, baking powder, baking soda, and salt.
Add mashed bananas, shortening, margarine or butter. Beat with an electric mixer on low speed until blended, then on high speed for 2 minutes. Add eggs and remaining flour, beat until blended. Stir in nuts.
Pour batter into a greased 8 x 4 x2 inch loaf pan. Bake at 350° for 50 to 60 minutes or until toothpick inserted near center comes out clean. Cool for 10 minutes on wire rack. Remove from pan. Cool thoroughly on wire rack. You can wrap and store overnight before serving. “Note: before baking bread I sprinkle mixture of sugar and cinnamon on top of loaf.”
