3 eggs
1 cup oil
2 cups sugar
2 cups grated zucchini
2 tsp. vanilla
3 cups flour
3 teaspoons cinnamon
1 tsp. salt
1 tsp. soda
½ tsp. baking powder
½ cup nuts

Directions:
Directions:
Beat eggs. Add oil, sugar, zucchini, and vanilla. Mix well. Mix flour, salt, cinnamon, soda, baking powder together. Add to liquid ingredients. Add nuts.
Pour into 2 loaf pans. Bake at 325° for 1 hour.

This is one of my very favorite recipes from when I was growing up. Mom made this all lot in the summer whenever she had a garden and lots of extra zucchini. It was one of the first bake recipes I ever made. It’s yummy. Sometimes mom would add a nice thin glaze of frosting on the top.
