4 Eggs
2 c. Sugar
3 c. Carrots, ground
1 c. Oil
2 c. Flour
2 T. Baking Soda
2 tsp. Cinnamon
1/2 c. Nuts, chopped
Directions:
Directions:
In a large mixing bowl, beat eggs slightly. Stir in sugar and carrots. Add oil and blend well. Sift together the dry ingredients and mix into the carrot mixture. Stir in nuts. Bake at 350º in a greased and floured 13x9 pan for 50-60 minutes or in 3, greased and floured round pans, for 30 minutes or until a toothpick inserted in the center comes out clean.
Frost when cooled with Whipped Butter Cream Icing.
