1 1/2 cups milk
2 Tbsp butter, melted, or vegetable oil
1 1/2 cups all-purpose flour
1 Tbsp baking powder
1 Tbsp sugar
1/2 tsp salt (I use a bit less)

Directions:
Directions:
1. In large bowl, beat together egg, milk and butter. In separate bowl, whisk together flour, baking powder, sugar and salt; pour over egg mixture and stir until almost smooth.

2. Heat skillet or griddle over medium heat; brush with butter. Pour about 1/4 cup batter for each pancake onto skillet. Cook 1.5-2 min or until underside is brown and bubbles break on too but do not fill in. Turn and cook for 30-60s longer or until underside is golden brown. Repeat with remaining batter, brushing skillet with more butter as needed.
