1 1/2 c. Potatoes, cubed
1 T. Cooking Oil
1 1/2 c. Ham, chopped
3/4 c. Cheddar Cheese, shredded
8 Eggs, slightly beaten
1/3 c. Milk
1 4 oz. can Diced Green Chilies
1/4 c. Green Onion, chopped finely
1/2 tsp. Oregano
1/2 7 oz. jar Roasted Red Peppers
1/3 c. Parmesan Cheese, shredded
1 c. Salsa

Directions:
Directions:
In an oven safe skillet, cook the potatoes in hot oil until tender. Remove from heat and sprinkle with the ham and 1/2 cup of the cheddar cheese. In a large mixing bowl, beat eggs slightly. Stir in milk, chili peppers, onion and oregano. Pour into the skillet over the potatoes. Arrange red peppers on top and sprinkle with remaining cheeses mixed together. Bake uncovered at 350º for 25-30 minutes or until center is just set and knife comes out clean. Serve with salsa.
