Left Over Potato Salad (3 c. or more)
1/2 lb of Cooked Bacon Crumbled
Reserve 2 tbsp of Bacon Grease
1 med. Yellow Onion
1 c Cream of Chicken Soup
Chicken Broth (depending on the amount and consistency desired)
Salt and Pepper to Taste

Smash left over potato salad to desired consistency. In a large sauce pan heat bacon grease over medium heat and saute the onion until translucent about 5-7 minutes stirring constantly. Add in the smashed potato salad and crumbled bacon. Mix in can of cream of mushroom soup and container of chicken broth (if you are wanting a thick soup please add a little of broth at a time until desired consistency) salt and pepper to taste. Allow to simmer over medium heat for 30 minutes. Top with cheddar cheese and serve.
