2 1/2 c. flour (+2 T. for High altitude)
3/4 c. sugar (minus 1 T.)
3/4 c. brown sugar (minus 1 T.)
1/2 tsp. salt
3/4 c. corn oil
2 eggs
1 c. buttermilk
1 tsp. baking powder (3/4 tsp. high alt.)
1 tsp. baking soda (3/4 tsp. high alt.)
1 tsp. cinnamon
1 tsp. vanilla
3/4 c. chopped walnuts

In a large bowl combine flour, sugar, brown sugar, salt and oil: mix well and reserve one cup for topping. To the remaining mixture in bowl mix in egg and buttermilk. Add baking powder, baking soda, cinnamon and vanilla and mix well. Spread batter in a greased 9x9" pan. Combine the one cup reserved topping with chopped walnuts. Sprinkle walnut mixture evenly over batter in pan. Bake at 350º for 30 minutes or until toothpick comes out clean.
(You may need to raise oven temperature to 375º for high altitude)
