2 c. water
1 1/2 c. Wesson oil
4 eggs
2 c. all-purpose flour
1 tsp. salt
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. ground cloves
3 c. finely grated carrots
1 c. chopped walnuts
Cream Cheese Icing:
6 oz. stick butter
8 oz. cream cheese, softened
1 box confectioners sugar, sifted
1/2 tsp. vanilla
chopped nuts

Directions:
Directions:
In a mixing bowl, combine sugar, oil and eggs together. Mix flour, salt, baking soda, cinnamon and cloves. Add dry mixture gradually. Stir in carrots and nuts. Bake in layer pans at 300º for 45 to 60 minutes. An oblong pan may be used, but baking time will be longer. Icing: Cream butter and cream cheese; add confectioners sugar slowly, mixing until creamy. Add vanilla. Spread on cake; sprinkle nuts on top.
