Set out all ingredients one hour before mixing to warm to room temperature.
Graham cracker crust (use enough mix for 1 1/2 crust, or use favorite recipe)
1 pint sour cream
1 lb. cream cheese
3/4 c. granulated sugar
3 eggs, separated
1 3/4 tsp. vanilla

Directions:
Preheat oven to 375º. Prepare graham cracker crust and line the bottom and sides of a spring-form pan. Do not bake. Combine 3 tbsp. sour cream, cream cheese, 1/2 c. sugar, egg yolks and 3/4 tsp. vanilla and mix until smooth. Beat egg whites until stiff, fold into batter. Pour into the crust-lined pan. Bake for 20 minutes; remove from oven and cool on rack for 15 minutes. Increase oven temperature to 475º. Combine remaining sour cream, sugar and vanilla. Blend well with a spoon. Pour over cake starting at the sides, spreading evenly to the center. Bake at 475º for 10 minutes. Remove from oven and cool on rack for 2 to 3 hours. Work spatula up and down sides to loosen. Remove sides of cake pan. Cover cake with waxed paper and refrigerate until thoroughly chilled; the longer the better!
