Pastry for 2 crust pie
2 Eggs
1 c. Sugar
6 T. Evaporated Milk
1 1/2 T. Tapioca
1 tsp. Vanilla
Dash of salt
1 c. Crushed Pineapple, drained
2 c. Rhubarb

Directions:
Directions:
Beat eggs well with an electric mixer. Add sugar, milk tapioca, vanilla and salt. Blend well. Stir in pineapple and rhubarb. Pour into the pie shell, cover with second pastry shell. Trim and flute edge, make slits in top crust. Bake at 350º for 50 minutes.
