2 unbaked 9" pie shells
1 1/2 c. Sugar
1 tsp. Salt
2 tsp. Cinnamon
1 tsp. Ginger
1/2 tsp. Ground Cloves
4 Eggs
3 1/2 c. Pumpkin
3 c. Evaporated Milk

Directions:
Directions:
Preheat oven to 425º combine sugar, salt, cinnamon, ginger, and cloves in a medium bowl. Beat eggs lightly in a large bowl. Stir in pumpkin, add sugar and spice mixture. Blend well. Gradually stir in evaporated milk. Pour into 2 pie shells. Bake 15 minutes. Reduce heat to 350º and continue baking for 40-50 minutes or until a knife inserted comes out clean. Cool on a wire rack for 2 hours. Serve immediately or chill.
