Ingredients: Flour, 2 cups baking powder, 3 teaspoons salt, 1/2 teaspoon sugar, 3 well rounded tablespoons butter or oil, 1/3 cup (butter is best) eggs, slightly beaten 2 milk or cream, about 1/2 cup (cream best)

Directions:Combine flour, baking powder, salt and sugar. Cut in butter, blending until it resembles coarse corn meal. To slightly beaten eggs, add enough milk or cream to make 3/4 cup. Add enough of this liquid to flour-fat mixture to make soft dough, stirring it iin until all flour disappears.
Turn out on lightly floured board ( I add all of liquid and add a little more flour if too wet). Knead lightly for about 1/2 minute. Pat out about 1/2 inch thick. Cut into 4-inch squares, or larger, and cut each diagonally in half to make triangles. (recipe says lightly brush with milk and sprinkle with sugar, I don't.)
Place on greased baking sheet and bake in hot oven, 425º, 12 to 15 minutes.
(I had these years ago in Carmel, CA, served with butter and rasberry preserves. They were grilled rather than baked and that is how I do mine. --more moist.) Lightly butter a griddle and heat over low heat. Put scones on and cook until lightly brown on one side, then turn and brown other side. May take about 5 minutes on each side. This is best recipe I have found. Much better than biscuits -- eggs give flavor -- even good cold, but best warmed. Can microwave leftovers. |
