2 eggs
2 tablespoons (tbsp.) of all-purpose flour
1/4 teaspoon (tsp.) of baking powder
1/2 teaspoon (tsp.) of salt
1/4 teaspoon (tsp.) of pepper
6 medium peeled and shredded potatoes
1/2 cup (c.) of finely chopped onions
1/4 cup (c.) of vegetable oil

Directions:
Directions:
1) In a large bowl, beat together the eggs, baking powder, salt, and peper, Mix in the potatoes and onions.
2) Heat the oil in a large skillet over medium heat. Over the batches, drop heaping tablespoonfuls of potato mixture into the skillet.
3) Press to flatten and cook about 3 minutes on each side, until browned and crisp.
4) drain on paper towels.

I've personally had Potato pancakes and I must admit they are a lot tastier than normal pancakes.
