6 cups of water
1 tbsp of salt
Ham bone (optional)
One large or two small peeled potatoes
4 cups of cubed potatoes
2 cups diced carrots
One large or two small shredded beets
Green or yellow beans (optional)
Two onions
1/2 cup of margarine
4 cups of shredded cabbage
1 large can of tomatoes (32 oz)
1/4 cup of cream
Fresh Dill
Black Pepper
Frozen Peas
1-2 dry red chillies
Splash of vinegar

Directions:
Directions:
In a large soup kettle, add about 6 cups of water with 1 tbsp of salt and a ham bone if you have one on hand. Put one large or 2 small whole peeled potatoes in the kettle. Let this start boiling while you prepare the vegetables. Veggies: 2 cups of diced carrots, 4 cups of cubed potatoes, 1 large or 2 small shredded beets, fresh green or yellow beans (if you have them), and any other green vegetables like red or green peppers. Put the veggies in the broth and gently boil until the whole potato is cooked. In a separate frying pan, sauté one or two onions in about 1/2 cup of margarine. Add about 4 cups of shredded cabbage and sauté until limp. Add 1 large can of tomatoes (32oz) to the cabbage mixture. Simmer.
Take out the whole potato and place it in a small bowl. Add the cabbage mixture to the soup kettle and simmer. Mash the whole potato well with about 1/4 cups of cream. Add a bit of liquid from the soup mixture to the mash potato mixture, mix it up, and pour into the soup kettle. Dont boil it anymore. Add dill, black pepper, frozen peas, a few dry red chillies and a little splash of vinegar. Salt to taste.

This is one of my most favourite recipes from Grandma. I would eat borsch any meal of the day, and have a hard time sharing it with friends and family when I'm lucky enough to get my hands on a jar of borsch from Grandma
