Ingredients:
Ingredients:
3 c. four
4 eggs
1 tsp. salt
1/2 c. sugar
1/2 qt. milk
1/4 c. butter, melted
3 tbsp. lard, heaping
powdered sugar

Directions:
Directions:
In a bowl mix the flour, 4 eggs, salt, milk and melted butter. Mix with a whisk until smooth. Melt the lard in a heavy pot (get it very hot). Pour in all the batter at once and cook it as a large pancake, over high heat. As it cooks lift up the edges of the pancake to let the uncooked batter flow underneath. When it is completely set, pull part the pancake with a spatula and turn pieces over to cook on the other side. The pancake pieces should have some browned edges, this dish only takes a few minutes to make, but you must stay with it if you do not want to have charred pieces. Pile onto a serving dish and sprinkle the top with powdered sugar. Serve with peaches, maple syrup or cinnamon, sugar and walnuts.

Personal Notes:
Grandma Dumelle made something yummy for dinner that she called Schmada, it tasted like scrambled pancakes. An interesting side note: Kaiser Schmarren is the Hungarian name for this dish. Kaiser's Schmarren loosely translates to "Emperor's Pain". The name comes from the story of how Franz Joseph, the Emperor of Austria-Hungary would emit groans of pleasure when he ate this pancake like dish.
