3 Eggs
1 3/4 c. Sugar
1 c. Vegetable Oil
2 tsp. Vanilla
1 T. Lemon or Lime Rind
2 c. Zucchini, shredded
3 c. Flour, sifted
1 tsp. Salt
1 tsp. Baking Powder
1 tsp. Baking Soda
1 T. Cinnamon
1/2 c. Walnuts, chopped

Directions:
Directions:
Beat the eggs until light and fluffy. Add the sugar, oil, vanilla, rind and zucchini, mix well. Combine the flour, salt, baking powder, baking soda and cinnamon. Mix thoroughly with the egg and sugar mixture. Stir in nuts. Pour batter into 2 loaf pans or 1 Bundt pan. Bake at 350º for 50-60 minutes. Bundt pan may take a little longer, test with toothpick.
