Chill beaters and mixing bowl in freezer or refrigerator for at least 1/2 hour.

1 large can evaporated milk (chilled in refrigerator at least a few hours)
1 box lemon jello (regular or sugar free)
1 c. hot water
Juice and rind of one fresh lemon
4 tbsp. sugar
Graham cracker crust (store-bought or homemade)

Directions:
Directions:
Whip the cold milk in big metal or glass mixing bowl. Mix jello with hot water and juice and rind of the lemon. Mix jello into whipped, cold milk. Pour into pie pan. I find this to be enough for two 8" pie shells. If desired, sprinkle graham cracker crumbs on top for decoration. Refrigerate overnight before cutting.
