5-6 lb. leg of lamb
1 T. salt
¾ tsp. freshly ground pepper
1 T. butter
1 ½ c. thinly sliced onion
1 c. thinly sliced carrots
1 ½ c. beef broth
½ c. cream
1 c. strong brewed coffee
1 T. sugar

Rub the lamb with salt and pepper. Melt the butter in shallow roasting pan and place the lamb and onions in it. Toast in 425º oven 30 minutes burning the lamb to brown all sides. Pour off the fat. Add the carrots and broth and roast at 350º for 45 minutes. Pour a mixture of the coffee, cream, and sugar over the lamb and roast another 45 minutes or to desired degree of rareness, basting frequently.

Transfer lamb to heated platter. Skim the fat from the “gravy” and purée in electric blender or force through a sieve. Taste for seasoning and serve in a gravy boat.
