1 2/3 cups buttermilk
2 2/3 cups whole bran cereal
1 cup all purpose flour (or can use ½ each of all purpose and wheat flour)
1¾ teaspoon baking powder
¼ teaspoon baking soda
1/3 cup margarine (or substitute applesauce)
¾ cup dark brown sugar
2 eggs
Raisins or dried fruit optional

Pour milk over bran cereal and let it sit for 5-10 minutes. Stir together all other dry ingredients. Beat margarine 30 seconds and add brown sugar. Add eggs and beat until combined. Add cereal mixture and flour and stir only until combined. Put in muffin cups half full. Bake at 350° for 30 minutes.

Note: Substitute sour milk for buttermilk - add 5 teaspoons lemon juice or vinegar to 1 2/3 cup milk.
