2 cups potatoes
1 carrot thinly sliced (optional)
¼ cup chopped onion
¼ cup flour
1 can chicken broth (can use fat free)
1 can evaporated milk (can use fat free)
1 can cream of chicken soup (can use fat free)
Cheddar Cheese shredded
Green onions chopped
Bacon bits

Directions:
Directions:
Peel and dice potatoes. Cover with water and cook until tender. Retain just a little of the potato water in the pot and remove potatoes. Stir in chopped onion and sauté. Stir in flour, then gradually add the chicken broth. Add evaporated milk and cream of chicken soup. Add the potatoes back in. Salt and Pepper to taste. If too thick can thin with milk. Heat well. Top with bacon bits, green onion and cheese as desired.
