Ingredients:  
3 lb yellow squash diced - can use zucchini or combination of both
2 onions diced
2 carrots sliced thin
1 can cream of chicken soup - can use fat free
2 packages Stove Top Cornbread stuffing mix - prepared per directions

Optional - can add chicken or turkey if desired to make a complete meal

Directions:
Directions:
1. Cook vegetables in salt water until tender
2. Drain and add cream of chicken soup - Mix well. If you are adding chicken or turkey, add that here.
3. Put half of prepared stuffing mix in bottom of a 9 x 13 pan
4. Add vegetable mixture on top of that
5. Put remaining half of stuffing on top of that
6. Bake at 375º for 45 minutes or until nice and hot and bubbly.
