6 slices of bacon, chopped
2 eggs, lightly beaten
2 cloves garlic, minced
1/2 onion, chopped
2 tsp ginger, grated
4 cups cooked rice (can be leftover, or day old)
1 1/2 tbsp soy sauce
1 8 oz can crushed pineapple, drained
4 scallions or green onions, chopped

Directions:
Preheat wok on medium high heat. Cook bacon till crispy. Remove and drain grease. Add eggs to hot pan. Scramble and remove. Add onion, garlic, and ginger to pan. Saute till tender. Add in rice breaking up chunks with spoon. Season the rice w salt and pepper. Toss till rice is toasty separated and coated. Add soy sauce. Add pineapple, bacon eggs, and scallions. Stir till combine.
