6 medium bell peppers (mixed colors)
1 medium onion, chopped
2 lbs. lean ground beef
1 c. rice, uncooked (not Minute Rice)
2 c. water
6 slices cheese (your choice)
1 can condensed tomato soup
3 tbsp. butter

Directions:
Directions:
Clean, core and remove the seeds of the peppers. Boil until soft, but still hold their shape. Cook rice in the 2 c. water until done (follow directions on rice package). Brown beef, onions with the butter in a skillet. Drain excess fat and add cooked rice to beef mixture; salt and pepper to taste. Place the peppers in a large casserole dish and stuff with some of the beef and rice mixture; add remaining rice mixture to the dish around the peppers. Add 1 cup water to the tomato soup and pour over peppers. Bake at 350º for 30-40 minutes. Put cheese slices on top to melt before removing from oven.
