Mix together one pint salt, one tablespoon of salt peter, one tablespoon sugar, one teaspoon black pepper. Cut steak to suit taste, put layer in jar, sprinkle with mixture. then another layer of meat, then mixture and so on. Cover with cloth & heavy weight. Brine will form.
