4 red peppers
3 cloves garlic, crushed
1 T parsley
olive oil
salt

Directions:

Cut tops off peppers and slice in half, lengthwise. Deseed. Place each half on greased cookie sheet, cut-side down, and mash down to flatten. Bake at 500 until dark brown or black. Remove peppers and place in paper or plastic bag for 20 minutes. Peel off skins and slice peppers into strips. Place peppers in tall jar. Fill jar with olive oil until all peppers are covered. Add garlic, 1 T parsley and salt to taste.
